Tia Maria, the only pecorino of Silvio Boi produced using exclusively liquid kid rennet and natural milk ferments with a single break of the curd, using the rice grain technique.
A pasteurized whole milk pecorino cheese, slightly straw-colored, seasoned >90 days with an enveloping and slightly piquant flavor. A cheese that blends perfectly with many traditional mediterranean dishes.
